Sofrito Dominicano

Ingredients:

• A handful of cilantro

• A handful of sweet peppers

• 1 purple onion

• 1 white onion

• 1 cubanelle pepper

• 1 red bell pepper

• 1 green bell pepper

• A handful of garlic cloves

• 1 lime (optional)

• 1 to 2 teaspoons olive oil

• 1 teaspoon vinegar

Instructions:

1. Prepare the Vegetables:

• Wash all your peppers, onions, garlic, and cilantro thoroughly.

• Roughly chop the onions, cubanelle pepper, bell peppers, and sweet peppers into manageable pieces.

2. Blend the Ingredients:

• Place the chopped vegetables, cilantro, and garlic into a blender or food processor.

• Add the olive oil and vinegar. If you like a hint of citrus, squeeze the juice of 1 lime into the mix (optional).

3. Pulse Until Smooth:

• Blend or pulse the mixture until it forms a smooth, chunky paste. If the mixture is too thick, you can add a little more olive oil to help it blend.

4. Store:

• Transfer the sofrito to an airtight container and store it in the fridge. It can last for up to 1 week or longer if frozen in portions.
